Recipe: Cookie Butter Cupcakes (40-D Challenge, Day 23)

Correction: it’s cookie butter-cookie dough cupcakes.

Yes, the ultimate cookie dessert for cookie fanatics. You’re welcome. 🙂

And if you’re not familiar with cookie butter, you haven’t lived yet. It is this amazing, glorious, good-but-bad-for-you taste of heaven in a jar. My life was changed when I had it for the first time. ❤ Go. Get it.

It was my first time preparing this heaven on a pastry, and it turned out pretty well, so why not share the recipe with you?

Cookie Butter- Cookie Dough cupcakes!

Ingredients

Cookie Dough

1 cup flour

1/4 tsp baking soda

1/4 tsp salt

1 stick melted butter

1/2 cup brown sugar

4 tablespoons granulated sugar

4 tablespoons milk

2 tsps vanilla

handful of chocolate chips

Using an electric mixer, mix melted butter and sugars together. Add milk and vanilla and mix. Sift flour and baking soda into batter and mix with a rubber spatula until just incorporated. Stir in chocolate chips.

Scoop out 1 to 2 tablespoons worth of cookie dough and roll into small balls. Place on parchment paper and/or baking tray. You should make between 18 to 24 balls. Place in freezer to harden for at least 30 minutes.

Cookie Butter Cupcakes

1 stick butter, softened

1 cup cookie butter

1 cup sugar

3 eggs

2 tsp vanilla

2 1/2 cups flour

2 tsps baking powder

1/2 cup milk

Cream butter, cookie butter, and sugar together. Add in eggs one at a time, mixing between each. Add vanilla. Sift in half of the flour and baking powder and fold in, using a rubber spatula. Add milk. Add remaining flour and baking powder and fold in, stopping once just incorporated.

Preheat oven to 350°F. Fill cupcake liners three-fourths of the way up. Place a cookie dough piece in each cupcake batter. Bake for 18-20 minutes. Let cool for at least 15 minutes before frosting.

Cookie Butter Frosting

1 stick butter, softened

1/3 cup cookie butter

1-2 cups powdered sugar

Cream butter and cookie butter together. Add the powdered sugar and beat until everything comes together.

Once the cupcakes are cooled, pipe the frosting on top and serve! Or you can just consume them all by yourself. 😛
